  • 4 boneless, skinless chicken breasts (1.5 lb)
  • 1 cup walnuts, finely chopped
  • 1 cup plain breadcrumbs
  • 2 large eggs
  • 1 medium fennel bulb, thinly sliced
  • 1 cup red cabbage, thinly sliced
  • 2 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper. In one bowl, beat eggs; in another, mix chopped walnuts with breadcrumbs.
  3. Dip each chicken breast in the egg mixture, then coat with the walnut-breadcrumb mix.
  4. Place the coated chicken in the baking dish and drizzle lightly with olive oil. Bake for 25-30 minutes or until golden brown and internal temperature reaches 165°F (75°C).
  5. While the chicken bakes, combine fennel, red cabbage, olive oil, lemon juice, salt, and pepper in a bowl; toss well.
