  • 1 cup ube (purple yam), fresh or frozen
  • 1 ½ cups cake flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 3 large eggs (room temperature)
  • ½ cup whole milk
  • ½ cup unsalted butter (melted)

Instructions

  1. Preheat oven to 350°F (175°C) and grease two round cake pans.
  2. If using fresh ube, peel, steam, and mash it until smooth. For frozen ube, thaw and mash until smooth.
  3. In one bowl, sift together cake flour, baking powder, and sugar. In another bowl, whisk together eggs, melted butter, milk, and mashed ube until creamy.
  4. Slowly combine wet ingredients into dry ingredients; stir gently until just mixed.
  5. Divide batter evenly between prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  6. Cool in pans for ten minutes before transferring to wire racks.
