Instructions
- Preheat oven to 350°F (175°C) and grease two round cake pans.
- If using fresh ube, peel, steam, and mash it until smooth. For frozen ube, thaw and mash until smooth.
- In one bowl, sift together cake flour, baking powder, and sugar. In another bowl, whisk together eggs, melted butter, milk, and mashed ube until creamy.
- Slowly combine wet ingredients into dry ingredients; stir gently until just mixed.
- Divide batter evenly between prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
- Cool in pans for ten minutes before transferring to wire racks.
