- 2 medium sweet potatoes (about 1 cup mashed)
- 1/4 cup tahini
- 2 tbsp extra virgin olive oil
- 1 clove garlic (roasted)
- 2 tbsp lemon juice (freshly squeezed)
- 1 tsp ground cumin
- 1/2 tsp salt (adjust to taste)
Instructions
- Preheat the oven to 400°F (200°C). Halve the sweet potatoes and roast cut-side down on a parchment-lined baking sheet for 25-30 minutes until tender.
- Wrap the garlic clove in aluminum foil with a drizzle of olive oil and add it to the oven during the last 20 minutes of roasting.
- Once cooled, scoop out the sweet potato flesh into a food processor. Add the roasted garlic, tahini, olive oil, lemon juice, cumin, and salt.
- Blend until smooth, adding water one tablespoon at a time if needed for desired consistency. Adjust seasoning as necessary.
- Serve in a bowl, drizzled with olive oil and sprinkled with cumin or paprika.
