  • 2 medium zucchinis
  • 1 cup cooked quinoa
  • 1 cup bell peppers (chopped)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 can (15 oz) black beans (rinsed and drained)
  • 1 cup shredded mozzarella cheese
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C). Lightly spray a baking dish with nonstick cooking spray.
  2. Cut zucchinis in half lengthwise and scoop out some flesh, saving it for later.
  3. Cook quinoa according to package instructions using vegetable broth.
  4. In a skillet, heat olive oil over medium heat. Add chopped onion, bell peppers, minced garlic, and reserved zucchini flesh; sauté until tender.
  5. Stir in black beans, cooked quinoa, cumin, chili powder, salt, and pepper until well combined.
  6. Stuff each zucchini half with the filling mixture, top with shredded cheese, then bake for 20-25 minutes until zucchinis are tender.
