- 1 lb ground beef (80/20 mix)
- 1 cup panko breadcrumbs
- 2 large eggs
- 2 tsp garlic powder
- 1/2 cup grated Parmesan cheese
- 2 tsp smoked paprika
- 4 oz mozzarella cheese (or your favorite cheese)
Instructions
- In a large bowl, mix ground beef, panko breadcrumbs, eggs, garlic powder, Parmesan cheese, and smoked paprika until just combined.
- Take a fistful of the mixture, flatten it in your palm, and place a cube of mozzarella in the center. Wrap the meat around the cheese to form a ball.
- Roll each stuffed meatball into golf ball-sized shapes.
- Preheat your smoker to 225°F (107°C). If using an oven or grill, set accordingly for smoking.
- Smoke the meatballs for about 1 hour or until they reach an internal temperature of at least 160°F (71°C).
- Serve hot with marinara sauce or enjoy them plain.
