  • 1 block (14 oz) firm tofu
  • 1/4 cup white sesame seeds
  • 1/4 cup black sesame seeds
  • 1 cup jasmine rice
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp natural peanut butter
  • 2 tbsp tahini
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp fresh lime juice
  • Salt and pepper to taste

Instructions

  1. Press the tofu by wrapping it in paper towels and placing a heavy object on top for 15 minutes. Cut into cubes.
  2. In one bowl, mix sesame seeds with salt and pepper. In another bowl, whisk an egg or flaxseed meal mixed with water for a vegan option. Dip each tofu cube in the egg wash, then coat with the sesame mixture.
  3. Rinse jasmine rice under cold water until clear. In a medium saucepan, combine rice, coconut milk, and equal parts water (about 1 cup each). Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes until fluffy.
  4. Preheat oven to 400°F (200°C). Spread coated tofu cubes on a lined baking sheet and bake for about 25 minutes until golden brown, flipping halfway through.
  5. For the sauce, whisk together peanut butter, tahini, soy sauce, lime juice, garlic powder (optional), and water until smooth.
  6. Serve coconut rice topped with crispy tofu cubes and drizzle with peanut tahini sauce.
