Ingredients

  • 2 medium zucchinis (about 300g), sliced into half-moons
  • 1/4 cup pine nuts (35g), lightly toasted
  • 1/4 cup fresh mint leaves (10g), chopped
  • 1/4 cup fresh basil leaves (10g), torn
  • 2 tablespoons extra virgin olive oil (30ml)
  • Salt and pepper to taste

Instructions

  1. Wash the zucchinis and slice them into half-moons about half an inch thick.
  2. Toast the pine nuts in a dry skillet over medium heat for about 3-5 minutes until golden brown.
  3. Heat olive oil in another skillet over medium heat until shimmering.
  4. Add the zucchini, season with salt and pepper, and sauté for about 5 minutes until slightly tender but still crunchy.
  5. Stir in the chopped mint and torn basil during the last minute of cooking.
  6. Add the toasted pine nuts just before serving and toss everything together.
