- 8 oz fresh mozzarella cheese
- 2 large bell peppers (red or yellow)
- 4 slices ciabatta or sourdough bread
- ¼ cup fresh basil leaves
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C). Slice bell peppers into quarters, remove seeds, and toss with olive oil, salt, and pepper.
- Spread the seasoned peppers on a lined baking sheet and roast for 25-30 minutes until tender and slightly charred.
- Slice ciabatta or sourdough into thick pieces, drizzle each side with olive oil, and place on another baking sheet.
- After roasting the peppers, top one side of each piece of bread with mozzarella and return to the oven for 5-7 minutes until melted.
- Layer roasted peppers and basil on top of the melted cheese; close the sandwich with another slice of bread. Optionally slice in half before serving.
