Ingredients

  • 3 cups fresh rhubarb, chopped
  • 1 medium yellow onion, finely chopped
  • 1 cup apple cider vinegar
  • 1 cup brown sugar
  • 2 tbsp fresh ginger, minced
  • 2 tsp mustard seeds

Instructions

  1. Wash rhubarb stalks under cold water. Trim ends and chop into half-inch pieces. Finely chop the onion and mince the ginger.
  2. In a medium saucepan over medium heat, combine rhubarb, onion, ginger, brown sugar, mustard seeds, and apple cider vinegar. Stir well.
  3. Bring the mixture to a simmer, then reduce heat to low once bubbling (about 5 minutes).
  4. Cook for 20-25 minutes until thickened, stirring occasionally.
  5. Remove from heat and let cool completely in the pan.
  6. Transfer chutney to a sterilized jar or bowl. Serve with assorted cheeses or enjoy directly.
