  1. Rinse the raspberries and set aside half for garnish. Blend the remaining raspberries with sugar until smooth, then strain to remove seeds.
  2. Bloom the gelatin in cold water for five minutes.
  3. Gently heat the raspberry puree, dissolve the bloomed gelatin, and stir in vanilla extract.
  4. Whip the cream to soft peaks, then fold in the raspberry mixture gently.
  5. Spoon into serving glasses and refrigerate for at least 2 hours before serving. Garnish with reserved raspberries.
