  • 12 oz rigatoni pasta
  • 1 cup ricotta cheese
  • 2 large lemons (zest and juice)
  • 4 cloves garlic (minced)
  • 2 tbsp extra virgin olive oil
  • 1 cup fresh basil leaves (chopped)
  • Salt and pepper to taste

Instructions

  1. Measure and chop the garlic; zest the lemons.
  2. Bring salted water to a boil in a large pot. Cook rigatoni until al dente according to package instructions. Reserve 1 cup of pasta water before draining.
  3. In the same pot, heat olive oil over medium heat and sauté minced garlic until fragrant (about 1 minute).
  4. Return drained rigatoni to the pot, adding ricotta cheese, lemon juice, zest, and reserved pasta water. Stir until creamy and well combined.
  5. Season with salt and pepper to taste.
