Instructions
- 1. Cook the Corn: Boil water in a large pot. Add fresh corn and cook for 5-7 minutes until tender. If using frozen corn, follow package instructions.
- 2. Cool and Cut: Let the corn cool slightly before cutting the kernels off each cob into a large bowl.
- 3. Mix the Dressing: In another bowl, whisk together mayonnaise, crema mexicana, lime juice, and chili powder until smooth.
- 4. Combine Everything: Add corn kernels to the dressing bowl along with cilantro and queso fresco. Stir gently until mixed well.
- 5. Chill Out: Cover and refrigerate for at least 30 minutes to enhance flavors.
