Description

Ingredients

  • 2 pounds Yukon Gold or Russet potatoes
  • 1/2 cup (1 stick) butter
  • 1/4 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 cup shredded cheddar cheese
  • 1/2 cup bacon bits (optional)
  • Chopped green onions for garnish (optional)

Instructions

  1. Peel and chop potatoes into chunks. Place in a pot, cover with cold water, add salt, and boil until fork-tender (15-20 minutes).
  2. Drain and return potatoes to the pot. Add butter, heavy cream, garlic powder, salt, and pepper; mash until smooth.
  3. Stir in shredded cheddar cheese and optional bacon bits.
  4. Preheat oven to 375°F (190°C). Grease a muffin tin and spoon the mixture into each cup, filling high for peaks.
  5. Bake for 20-25 minutes until golden brown on top.
  6. Garnish with green onions before serving warm.
