  • 34 lb chuck roast
  • 4 medium Yukon Gold potatoes, chopped
  • 4 large carrots, chopped
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 cup dry red wine
  • 2 tsp dried thyme

Instructions

  1. Preheat oven to 300°F (150°C).
  2. In a heavy skillet over medium-high heat, sear the chuck roast for about 4 minutes per side until browned.
