  • 1/2 cup melted coconut oil
  • 3/4 cup brown sugar
  • 1/2 cup pineapple tidbits (canned or fresh)
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mash the ripe bananas until smooth. Add melted coconut oil, brown sugar, and eggs; mix well.
  3. Fold in pineapple tidbits along with any juice.
  4. In another bowl, whisk together flour, baking powder, and salt. Gradually combine with the wet mixture until just mixed.
