Ingredients

  • Beef Chuck Roast
  • Guinness Stout
  • Carrots
  • Yukon Gold or Russet Potatoes
  • Onions
  • Garlic
  • Low-Sodium Beef Broth
  • Thyme (fresh or dried)
  • Bay Leaves

Instructions

  1. Cut beef chuck roast into bite-sized cubes, season with salt and pepper. In a large pot, heat oil over medium-high heat and sear the beef until browned. Remove from the pot.
  2. In the same pot, sauté diced onions until translucent (about 5 minutes). Add minced garlic; cook for an additional minute.
  3. Pour in Guinness to deglaze the pot, scraping up flavorful bits. Bring to a gentle boil for 2 minutes.
  4. Return beef to the pot along with chopped carrots and potatoes. Add enough beef broth to cover ingredients by an inch. Toss in thyme and bay leaves.
  5. Simmer on low heat for at least 2 hours until beef is tender, stirring occasionally.
  6. Adjust seasoning before serving; discard bay leaves. Serve warm with crusty bread or mashed potatoes.
