- 1/2 cup panko breadcrumbs

Instructions
- Hard-boil the eggs: Place in a pot of cold water, bring to a boil over medium-high heat. Cover and remove from heat; let sit for 12 minutes, then cool in an ice bath.
- Prepare the shrimp: Heat oil in a skillet over medium heat. Season shrimp with salt and pepper, cook until pink (about 3-5 minutes), then let cool.
- Mash the yolks: Remove cooled yolks into a bowl and mash with mayonnaise, Dijon mustard, lemon juice, salt, and pepper until smooth.
- Combine: Finely chop the cooled shrimp and fold into the yolk mixture.
- Stuff the egg whites: Spoon or pipe the filling back into the egg whites.
- Fry: Coat any leftover shrimp mixture in panko breadcrumbs and fry until golden brown.
