  • 2 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 2 tsp salt
  • 1 tsp black pepper
  • 8 soft flour or corn tortillas
  • 1 cup pico de gallo (fresh tomatoes, onions, cilantro, lime juice)
  • 1 cup guacamole

Instructions

  1. Trim excess fat from the brisket, rinse under cold water, and pat dry.
  2. Mix paprika, garlic powder, onion powder, salt, and pepper; rub generously over the brisket.
  3. Preheat your smoker to 225°F (107°C) and add hickory or mesquite wood chips.
  4. Smoke the brisket for 8-10 hours until it reaches an internal temperature of 200°F (93°C).
  5. Rest the brisket under foil for at least one hour before slicing thinly against the grain.
  6. Warm tortillas on the grill; assemble by adding brisket, pico de gallo, and guacamole.
