  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 1 cup diced onion (1 medium onion)
  • 1 cup diced bell peppers (mixed colors)
  • 3 cloves fresh garlic, minced
  • 1 cup chicken broth
  • 8 oz cream cheese, cubed
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Chop the onion and bell peppers; set aside.
  2. Place chicken breasts in the bottom of the crock pot. Season with chili powder, cumin, salt, and pepper.
  3. Add chopped onions and bell peppers on top of the chicken.
  4. Pour in chicken broth to keep everything moist.
  5. Cook on low for 6 hours or until chicken is tender.
  6. About 30 minutes before serving, stir in cubed cream cheese until melted and creamy.
