- 3 boneless, skinless chicken breasts (about 1 lb)
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, sliced
- 2 cups shredded cheese (cheddar or Mexican blend)
- 4 large flour tortillas
- 2 tbsp fajita seasoning
- 2 tbsp olive oil (for cooking)
- ½ cup sour cream
- Juice of 1 lime
Instructions
- Preheat a large skillet over medium heat.
- Season chicken breasts with fajita seasoning and cook in hot skillet with olive oil for 5-7 minutes per side until golden brown and cooked through. Remove from pan and let rest.
- In the same skillet, sauté sliced onions and bell peppers for about 5 minutes until tender.
- Shred the cooked chicken and add it back to the skillet with additional fajita seasoning if desired. Mix well.
- On one half of each tortilla, layer shredded chicken mixture and cheese. Fold the tortilla over.
- Wipe out the skillet; add more oil if needed, then cook each quesadilla for about 3-4 minutes per side until golden brown and crispy.
- Serve with a drizzle of sour cream mixed with lime juice.
