Ingredients

Scale
  • 1 box (15.25 oz) carrot cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup water
  • 1 cup cream cheese frosting (store-bought or homemade)
  • 1 cup melting chocolate wafers or chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking pan and prepare the carrot cake mix according to package instructions using eggs, vegetable oil, and water. Bake until golden brown.
  2. Cool the cake completely on a wire rack, then crumble it into fine pieces in a large bowl.
  3. Mix in the cream cheese frosting until a dough-like consistency forms.
  4. Roll small portions of the mixture into balls (about 1 inch in diameter) and place them on a parchment-lined baking sheet.
  5. Freeze the truffle balls for 30 minutes to help them maintain their shape.
  6. Melt the chocolate coating as per package instructions. Dip each frozen truffle into the melted chocolate until fully coated, then return them to the parchment paper to set at room temperature.
