  • 1 cup fresh orange juice (about 34 oranges)
  • Zest of 1 orange
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. Trim excess fat from the chicken thighs and place them in the crockpot.
  2. Juice the oranges to obtain 1 cup of juice and zest one of them.
  3. In a bowl, whisk together orange juice, zest, soy sauce, honey, garlic, and ginger until well combined.
  4. Pour the sauce over the chicken in the crockpot, ensuring all pieces are coated.
  5. Cook on low for 6 hours or high for 3 hours until chicken is tender.
  6. To thicken the sauce, mix cornstarch with water and stir into the crockpot; cook on high for an additional 30 minutes.
