  • 1 cup freshly squeezed orange juice
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 2 tbsp fresh ginger (grated)
  • 4 garlic cloves (minced)
  • 2 tbsp cornstarch
  • Salt and pepper to taste

Instructions

  1. Chop the chicken thighs into bite-sized pieces. Mince the garlic and grate the ginger.
  2. In a mixing bowl, whisk together orange juice, soy sauce, brown sugar, garlic, ginger, and cornstarch until smooth.
  3. Add the chicken to the crockpot and pour the sauce over it, ensuring even coverage.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours until tender.
  5. For a thicker sauce, mix an extra tablespoon of cornstarch with water and stir into the crockpot 30 minutes before serving.
