  • 4 medium Russet potatoes, peeled and sliced
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 cup sour cream
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon onion powder
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper (adjust to taste)

Instructions

  1. Peel and slice the Russet potatoes into thick slices.
  2. In a large bowl, combine 1.5 cups of cheddar cheese, sour cream, melted butter, onion powder, salt, and pepper; mix well.
  3. Layer half of the sliced potatoes in the crockpot, then pour half of the cheese mixture over them. Repeat with remaining ingredients.
  4. Cover and cook on low for 6 hours or high for 3 hours until potatoes are tender.
  5. During the last 15 minutes of cooking, sprinkle remaining cheddar cheese on top and cover until melted.
