Ingredients

  • 2 pounds starchy potatoes (e.g., Russets)
  • 2 cups chopped kale or cabbage
  • 4 tablespoons unsalted butter
  • 1/2 cup full-fat milk or heavy cream

  • Salt and pepper to taste

Instructions

  1. Peel and chop the potatoes into even chunks. Boil in salted water for 15-20 minutes until fork-tender.
  2. While the potatoes cook, chop the kale or cabbage and steam or boil for about 5 minutes until wilted.
  3. Drain the potatoes and return them to low heat to evaporate excess moisture. Mash with butter until smooth.
