  • 1 cup unsalted butter, cold and cubed
  • ¾ cup granulated sugar
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 6 cups Granny Smith or Honeycrisp apples, peeled and sliced
  • 2 tbsp lemon juice
  • ½ tsp salt
  • Ice water (approximately 6-8 tbsp)

Instructions

  1. Prepare the crust by mixing flour and salt in a large bowl. Cut in cold butter until it resembles coarse crumbs. Gradually add ice water until the dough forms. Divide into two discs, wrap in plastic wrap, and refrigerate for at least one hour.
  2. Preheat oven to 425°F (220°C).
  3. Make the filling by tossing sliced apples with sugar, cinnamon, nutmeg, and lemon juice in another bowl. Let sit while dough chills.
  4. Roll out one disc of dough on a floured surface into a circle slightly larger than your pie dish. Place it in the dish and trim excess.
  5. Fill with apple mixture and dot with small pieces of butter before rolling out the second disc of dough to cover it. Seal edges by crimping and cut slits to allow steam to escape.
  6. Bake for 45-50 minutes until golden brown and bubbly. Serve warm.
