  • 2 lbs russet potatoes, thinly sliced
  • 2 cups heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Gruyère cheese
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp fresh thyme, chopped

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a large baking dish.
  2. Slice russet potatoes into thin rounds (about 1/8 inch thick).
  3. In a mixing bowl, whisk together heavy cream, minced garlic, salt, pepper, and fresh thyme.
  4. Layer half of the potato slices in the baking dish. Pour half of the cream mixture over them and sprinkle half of the cheese on top. Repeat with remaining ingredients.
  5. Cover with aluminum foil and bake for 40 minutes. Remove foil and bake uncovered for an additional 20-25 minutes until bubbly and golden brown.
  6. Let cool for five minutes before serving.
