  • 1 whole turkey (1012 pounds)
  • 2 cups sharp cheddar cheese, shredded
  • 1/4 cup fresh thyme, chopped
  • 1/4 cup fresh rosemary, chopped
  • 6 garlic cloves, minced
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Rinse the turkey under cold water and pat dry with paper towels. Season generously inside and out with salt and pepper.
  3. In a bowl, mix shredded cheddar cheese, minced garlic, and chopped herbs.
  4. Loosen the skin over the breast of the turkey and stuff the cheese mixture underneath.
  5. Drizzle olive oil over the entire turkey and rub it in for crispy skin.
  6. Roast in the preheated oven for 3-4 hours or until the internal temperature reaches at least 165°F (75°C), basting occasionally.
