Instructions
- 1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
- 2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt.
- 3. In another bowl, mix vegetable oil, eggs, and vanilla until smooth. Add grated carrots.
- 4. Pour wet mixture into dry ingredients; stir gently until just combined.
- 5. Spoon batter into muffin tins about two-thirds full. Bake for 18-20 minutes or until a toothpick comes out clean.
- 6. For frosting, beat cream cheese and butter until fluffy. Gradually mix in powdered sugar and vanilla until smooth.
