  • ¼ cup unsalted butter (softened)
  • 2 cups powdered sugar (sifted)
  • 1 tsp vanilla extract

Instructions

  1. 1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. 2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt.
  3. 3. In another bowl, mix vegetable oil, eggs, and vanilla until smooth. Add grated carrots.
  4. 4. Pour wet mixture into dry ingredients; stir gently until just combined.
  5. 5. Spoon batter into muffin tins about two-thirds full. Bake for 18-20 minutes or until a toothpick comes out clean.
  6. 6. For frosting, beat cream cheese and butter until fluffy. Gradually mix in powdered sugar and vanilla until smooth.
