- 1/2 cup cold unsalted butter (for crust)
- 5–7 tbsp cold water
- 1/2 cup heavy cream (for caramel sauce)

Instructions
- Preheat oven to 425°F (220°C).
- Peel, core, and slice apples; toss with granulated sugar, brown sugar, cinnamon, and vanilla.
- In a bowl, mix flour and salt. Cut in cold butter until crumbly. Gradually add cold water until dough forms; chill for an hour.
- Roll out one dough disc into a circle and place it in a pie pan. Fill with the apple mixture.
- Roll out the second disc for the top crust or lattice; cut slits for steam escape.
- Bake for 45-50 minutes until golden brown and bubbly. Cool before serving with warm caramel sauce.
