Description

Beet salad is a vibrant and healthy dish that beautifully combines the earthy sweetness of roasted beets with fresh mixed greens, creamy goat cheese, and crunchy walnuts. Tossed in a tangy balsamic vinaigrette, this colorful salad is perfect for any occasion, from casual picnics to elegant dinner parties. Ingredients

  • 4 medium fresh beets
  • 4 cups mixed greens (arugula, spinach, kale)
  • 1/2 cup crumbled goat cheese
  • 1/2 cup toasted walnuts
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Wrap each washed beet in aluminum foil and place them on a baking sheet. Roast for about 60 minutes until tender.
  2. While the beets roast, rinse mixed greens under cool water and dry.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  4. Once beets are roasted and cooled slightly, peel the skins off and slice into wedges.
  5. In a large bowl, combine mixed greens, sliced beets, goat cheese, and walnuts.
  6. Drizzle dressing over the salad just before serving and toss gently. Serve on plates or in a large bowl.
