- 1 cup mixed bell peppers (red, yellow, green), chopped
- 1 cucumber, sliced
- 1 small red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil (plus extra for drizzling)
- 2 teaspoons garlic powder
- 2 teaspoons smoked paprika
- 3 tablespoons low-sodium soy sauce
- Salt and pepper to taste
Instructions
- Cut chicken into bite-sized pieces and mix olive oil, garlic powder, smoked paprika, soy sauce, salt, and pepper in a bowl. Toss chicken until coated and marinate in the fridge for at least 30 minutes.
- Chop bell peppers into chunks and slice cucumber and red onion. Halve cherry tomatoes.
- Thread marinated chicken and veggies onto skewers, alternating between them.
- Preheat the grill over medium heat. Grill skewers for about 10 minutes, turning occasionally until fully cooked (internal temperature reaches 165°F).
