- ½ cup powdered sugar
- 1 stick (4 oz) unsalted butter, room temperature
- 1 egg yolk
- 1 cup heavy cream (for ganache)
- 8 oz dark chocolate, chopped
- 1 cup granulated sugar (for caramel)
- Sea salt to taste
Instructions
- Preheat the oven to 350°F (175°C). In a bowl, mix flour, cocoa powder, and powdered sugar. Add softened butter and egg yolk; combine until crumbly.
- Press the mixture into tartlet pans or muffin tins. Prick with a fork and bake for about 15 minutes. Let cool.
- For the caramel, melt granulated sugar over medium heat until golden brown. Remove from heat; whisk in heavy cream until smooth.
- Warm heavy cream in another saucepan; remove from heat and stir in dark chocolate until melted.
- Pour caramel into cooled tart shells, then top with chocolate ganache. Chill for at least two hours before serving.
- Just before serving, sprinkle sea salt on top.
