  • 2 medium sweet potatoes (about 1 lb), peeled and sliced into 1/4-inch rounds
  • 1 lb ground lamb or beef
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 14 oz canned crushed tomatoes
  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 2 cups whole milk, warmed
  • 2 large eggs, beaten
  • Salt and pepper to taste
  • 1 tsp dried oregano
  • Pinch of nutmeg

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  2. In a skillet over medium heat, sauté the onion until translucent. Add garlic and ground meat; cook until browned. Stir in crushed tomatoes and spices. Simmer for 10 minutes.
  3. In another saucepan, melt butter over low heat. Whisk in flour for two minutes; gradually add warmed milk while whisking until thickened. Remove from heat and stir in beaten eggs.
  4. Layer half of the sweet potato slices at the bottom of the greased dish. Add half of the meat sauce followed by half of the béchamel sauce. Repeat layers.
  5. Cover with foil and bake for 30 minutes, then uncover and bake for an additional 15 minutes until golden brown.
