Description

Italian Meatball Soup is a comforting dish that brings together juicy meatballs, vibrant vegetables, and aromatic herbs in a savory broth. Ideal for chilly evenings, this hearty soup not only warms you but also creates cherished memories around the dinner table. Quick to prepare and fully customizable, it’s perfect for family gatherings or cozy dinners at home.

Ingredients

Scale
  • 1 lb lean ground beef
  • 1 cup plain breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 large egg
  • ¼ cup chopped fresh basil
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare the meatballs: In a bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, basil, salt, and pepper. Mix well and form into 1-inch meatballs.
  2. Brown the meatballs: Heat olive oil in a large pot over medium heat. Brown meatballs on all sides for about 5 minutes. Remove from pot.
  3. Sauté vegetables: In the same pot, add diced carrots and celery; sauté for about 3 minutes until softened.
  4. Build your soup: Add canned tomatoes (with juices), vegetable broth, and remaining basil to the pot. Bring to a gentle boil before returning the meatballs.
  5. Simmer: Reduce heat and let simmer for about 20 minutes to meld flavors.
  6. Serve up: Ladle soup into bowls, garnish with extra Parmesan if desired, and enjoy with crusty bread.
