  • 1 cup elbow macaroni
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium beef broth
  • 1 tbsp Italian seasoning
  • Salt & pepper to taste

Instructions

  2. Add the onion, garlic, carrots, and celery; sauté for about 5 minutes until tender.
