- 4 bone-in chicken thighs (skin-on)
- 2 medium carrots (chopped)
- 2 celery stalks (chopped)

- 3 garlic cloves (minced)
- 4 cups low-sodium chicken stock

- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Chop the carrots, celery, and onion into bite-sized pieces, and mince the garlic.
- In a large pot over medium heat, add olive oil and brown the chicken thighs skin-side down for about 5 minutes; flip and cook for an additional 3 minutes before removing from the pot.
- In the same pot, sauté onions, carrots, and celery for about 5 minutes until softened. Add minced garlic during the last minute.
- Pour in chicken stock and stir in dried thyme; scrape up any brown bits from the bottom of the pot.
- Return the browned chicken thighs to the pot, bring to a boil, then reduce heat and simmer gently for about 1 hour until the chicken is tender.
