Instructions
- In a large pot, bring chicken broth to a gentle simmer over medium heat. Add chicken breasts and cook for 15-20 minutes until fully cooked. Remove chicken and shred it into bite-sized pieces.
- Rinse rice under cold water until clear. Add to the simmering broth after removing the chicken and cook according to package instructions (about 15 minutes).
- In a medium bowl, whisk together eggs and lemon juice until smooth. Gradually add 1 cup of hot broth while whisking to temper the eggs.
