Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1 cup whole milk ricotta cheese
  • 1 cup fresh blueberries
  • Zest and juice of 1 lemon
  • 1/2 cup whole milk
  • 2 large eggs
  • 2 tbsp unsalted butter (for greasing)

Instructions

  1. In a large bowl, whisk together flour and baking powder.
  2. In another bowl, mix ricotta cheese, milk, eggs, lemon juice, and zest until smooth.
  3. Combine wet ingredients with dry ingredients, stirring gently to avoid overmixing. Fold in blueberries.
  4. Preheat a non-stick skillet over medium heat and lightly grease with butter.
