- Juice of 3 fresh limes
- 4 garlic cloves, minced
- 2 tbsp olive oil
- 2 tbsp honey
- 3 tbsp low-sodium soy sauce
- 2 cups cooked rice or quinoa
- 2 cups mixed fresh vegetables (bell peppers and broccoli)
Instructions
- Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick cooking spray.
- In a large bowl, combine lime juice, minced garlic, olive oil, honey, and soy sauce. Add chicken breasts and coat well.
