- 2 cups fresh spinach or kale

Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent (about 5 minutes). Stir in minced garlic and cook until fragrant (about 1 minute).
- Add chopped carrots and celery; cook until softened (approximately 7 minutes).
- Stir in zucchini and canned tomatoes with their juice; mix well.
- Pour in the vegetable broth along with Italian seasoning, salt, and pepper. Bring to a boil then reduce heat; let simmer for about 20 minutes.
- In the last five minutes of cooking, add spinach or kale until wilted.
