  • 2 bell peppers (1 red, 1 yellow), sliced
  • 1 cup orzo pasta
  • 2 tbsp fresh basil, chopped
  • 2 tbsp fresh parsley, chopped
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cups low-sodium chicken broth
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix ground chicken, herbs, salt, pepper, and breadcrumbs until combined. Form into golf ball-sized meatballs.
  3. Arrange meatballs on the baking sheet and roast for about 20 minutes until golden brown.
  4. Cook orzo in salted boiling water for 8-10 minutes, then drain.
  5. In a skillet over medium heat, sauté sliced bell peppers in olive oil for about 5 minutes until soft yet crunchy.
  6. Combine cooked orzo with sautéed peppers and chicken broth in the skillet. Gently fold in roasted meatballs and simmer for a few minutes before serving.
  7. Serve warm topped with grated Parmesan cheese.
