- 4 boneless, skinless chicken breasts (approximately 1.5 lbs)
- 1 cup uncooked long-grain rice
- 1 cup water
- 1 cup full-fat Greek yogurt
- 1 medium cucumber, grated
- 3 garlic cloves, minced
- Juice of 1 lemon
- 2 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp extra virgin olive oil
Instructions
- 1. Preheat your oven to 400°F (200°C) and lightly grease a large baking dish.
- 2. Arrange chicken breasts in the baking dish, season with salt, pepper, and half of the oregano.
- 3. In a bowl, mix uncooked rice with water according to package instructions; pour it over the seasoned chicken.
- 4. Prepare the tzatziki by combining Greek yogurt, grated cucumber, minced garlic, lemon juice, remaining oregano, salt, and pepper until smooth.
- 5. Pour half of the tzatziki sauce over the chicken and rice mixture; drizzle with olive oil.
- 6. Cover with aluminum foil and bake for 30 minutes; remove foil and bake for an additional 10-15 minutes until chicken is cooked through.
- 7. Serve hot with remaining tzatziki sauce drizzled on top.
