Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 cucumber, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 2 tbsp white miso paste
  • 2 tbsp fresh lime juice
  • 3 tbsp olive oil
  • 1 tsp honey or agave syrup
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, drizzle olive oil. Add shrimp seasoned with salt and pepper. Cook until pink (about 6 minutes total), then set aside.
  2. Dice avocados, slice cucumber, and halve cherry tomatoes.
  3. In a small bowl, whisk together miso paste, olive oil, honey/agave syrup, lime juice, salt, and pepper until smooth.
  4. In a large bowl, combine shrimp, avocado, cucumber, and tomatoes. Drizzle with the dressing and gently toss until coated.
  5. Serve chilled or at room temperature.
