- 3 medium zucchinis (sliced lengthwise)
- 1 cup ricotta cheese
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese

- 1/4 cup fresh basil (chopped)
- 2 cloves garlic (minced)
- Salt (to taste)
Instructions
- Preheat oven to 375°F (190°C).
- Slice zucchinis into thin strips (about 1/8 inch thick). Sprinkle with salt and let sit for 15 minutes to draw out moisture.
- In a bowl, mix ricotta cheese, minced garlic, chopped basil, and half of the Parmesan cheese until well combined.
- In a baking dish, layer marinara sauce, zucchini slices, half of the ricotta mixture, and repeat until ingredients are used up. Top with mozzarella cheese.
- Cover with foil and bake for 30 minutes; remove foil and bake an additional 15 minutes until golden brown.
- Let cool slightly before serving.
