- 4 boneless, skinless chicken breasts
- 2 cups ripe cherry tomatoes, halved
- 1 cup fresh basil leaves, roughly chopped
- 4 cloves garlic, minced
- 3 tbsp extra virgin olive oil
- Salt and pepper to taste
- 1 tsp dried oregano
Instructions
- Wash and halve the cherry tomatoes, mince the garlic, and chop the basil.
- In a bowl, mix salt, pepper, and dried oregano. Season both sides of each chicken breast with this mixture.
- Drizzle 2 tbsp olive oil in the bottom of your slow cooker. Place the seasoned chicken breasts inside.
- Layer the halved cherry tomatoes on top of the chicken and sprinkle minced garlic evenly over everything.
- Drizzle another tablespoon of olive oil over the top.
- Cover and cook on low for 6 hours or high for 3 hours until the chicken is tender and fully cooked.
