Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups ripe cherry tomatoes, halved
  • 1 cup fresh basil leaves, roughly chopped
  • 4 cloves garlic, minced
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1 tsp dried oregano

Instructions

  1. Wash and halve the cherry tomatoes, mince the garlic, and chop the basil.
  2. In a bowl, mix salt, pepper, and dried oregano. Season both sides of each chicken breast with this mixture.
  3. Drizzle 2 tbsp olive oil in the bottom of your slow cooker. Place the seasoned chicken breasts inside.
  4. Layer the halved cherry tomatoes on top of the chicken and sprinkle minced garlic evenly over everything.
  5. Drizzle another tablespoon of olive oil over the top.
  6. Cover and cook on low for 6 hours or high for 3 hours until the chicken is tender and fully cooked.
