- 2 cups rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced (preferably English)
- 1/2 cup red onion, thinly sliced
- 1 cup bell peppers (mixed colors), diced
- 1/2 cup feta cheese, crumbled
- 3 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- Salt & pepper to taste
Instructions
- Cook the rotini pasta in salted boiling water until al dente (about 8–10 minutes). Drain and rinse under cold water.
- While the pasta cools, chop the cherry tomatoes, cucumber, bell peppers, and red onion into bite-sized pieces.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- In a large bowl, combine the cooled pasta with the chopped veggies and crumbled feta. Pour the dressing over and toss gently to coat.
- Cover and chill in the refrigerator for at least 30 minutes before serving.
