  • 1 medium seedless watermelon (about 68 lbs)
  • 1/2 cup balsamic vinegar
  • 2 tbsp honey
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh mint leaves, chopped

Instructions

  1. Preheat the grill to medium-high heat (400°F or 200°C).
  2. Slice the watermelon into thick steaks, about 1 inch thick.
  3. In a saucepan over medium heat, combine balsamic vinegar and honey. Simmer until reduced by half and syrupy, about 10-15 minutes.
  4. Brush both sides of the watermelon slices with olive oil. Grill for 3-4 minutes on each side until grill marks form.
  5. Drizzle grilled watermelon with balsamic glaze and sprinkle with chopped mint before serving.
