  • 4 large portobello mushrooms
  • 1 cup cherry tomatoes, halved
  • 8 oz fresh mozzarella cheese, cubed
  • 1/2 cup fresh basil leaves, torn

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Clean the portobello mushrooms with a damp cloth, then remove stems and gills using a spoon.
