  • 1 pound Brussels sprouts, halved
  • 2 tablespoons extra virgin olive oil
  • ½ cup freshly grated Parmesan cheese
  • ½ cup creamy Caesar dressing
  • 1 cup croutons

Instructions

  1. Preheat oven to 400°F (200°C). Wash and trim Brussels sprouts, cutting them in half.
  2. Toss Brussels sprouts with olive oil, salt, and pepper in a bowl until evenly coated.
  3. Spread the Brussels sprouts on a baking sheet in a single layer and roast for 20-25 minutes until golden brown.
  4. While roasting, prepare the dressing by mixing mayonnaise, lemon juice, minced garlic, Worcestershire sauce, Dijon mustard, and Parmesan cheese in a bowl.
  5. Once slightly cooled, combine roasted Brussels sprouts in a large serving bowl with the dressing and toss to coat.
  6. Top with additional Parmesan cheese and croutons. Serve immediately.
